Cupcakes with lemon curd

Bake an original treat for tea - it's a divine treat! Kurd is nothing but custard lemon cream. It can act as an independent dessert, or it can be part of others - cakes, pastries. Today I suggest you bake cupcakes with lemon curd, and we will decorate them with delicate cream on top!

Cooking method

Cooking time: 1 h 10 min

Cooking cakes:

1. Combine the egg, all the liquid ingredients and lemon zest. Beat until smooth with a whisk.
2. Sift the flour and mix with all the other dry parts of the dough.
3. Pour the liquid mixture into the flour and knead a homogeneous, viscous, flowing dough.
4. Fill the cupcake molds with 2/3 of the dough and bake for 30 minutes in a preheated 160 degree oven.

While the cupcakes are baking, we cook the kurd:

1. In a saucepan, mix all the ingredients together with a whisk. Cook over low heat until thickened, stirring constantly. It's about 10 minutes.
2. Filter through a sieve. Let it cool down.

While the cakes and kurd are cooling down, it's time to prepare the cream:

1. Beat cream cheese and butter with a mixer for 5 minutes.
2. For two times you need to add all the powdered sugar, whipping after adding another 5 minutes.

The most delicious stage is the cupcake assembly:

1. In the cakes, we make a recess in the middle from above and fill it with lemon curd. With the help of a baking bag and any nozzle you like, we decorate the cupcakes with butter cream on top.
