Step 1:
Prepare all the necessary ingredients for the charlotte. Eggs for a pie need selected, large and fresh. If the eggs are small, then take 5-6 pieces (the charlotte will turn out only more magnificent). Use flour of the highest grade.
Step 2:
Thoroughly lubricate the bottom and walls of the baking dish with butter. Do not spare the oil: the more of it, the better - so the fruit will not stick to the bottom of the mold. Place the pineapple rings in a single layer in the mold. You can use any shape - rectangular or round. Pineapple rings come in larger and smaller diameters. I have a small diameter of fruits and they all fit exactly into the shape of 24 * 18 cm .
Step 3:
Cut the remaining pineapples that did not fit into the mold into small pieces. You can mix these pieces into the finished dough or sprinkle them on top of the dough.
Step 4:
Beat eggs with a mixer with sugar and vanilla sugar into a fluffy airy foam. The airiness of your pie depends on how you beat the eggs. You can not beat the mass straight white and to a density - the protein will lose the air bubbles that lift the dough. And in this case, even baking powder will not help. The dough will either not rise at all, or it will rise very weakly.
Step 5:
Pour the sifted flour in parts, beating the mass at slow speeds. This is necessary again in order not to overdo it and not to precipitate the egg mass.
Step 6:
Pour the dough into the mold on the pineapple rings and flatten.
Step 7:
Sprinkle sliced pineapple slices on top. Bake the charlotte in a preheated 180 ° C oven for about 35 minutes. During this time, it is better not to open the oven, otherwise the biscuit will settle.
Step 8:
Cool the finished cake slightly, turn it over on a platter so that the pineapple rings are on top, and cut into pieces. Enjoy your meal!
