    Now we need to turn them into mashed potatoes. I use a food processor for this, you can do it with an immersion blender. If there is neither one nor the other, feel free to take a meat grinder. Chop the apricots into puree in any way convenient for you. Put the mashed potatoes in a bowl in which you will cook jam.

    Weigh the finished puree (excluding the weight of the dishes). I have 935 grams.

    Wait for the jam to boil. Such a foam will appear on its surface. Gently remove the foam with a spoon.

    Reduce the heat to a minimum and cook the jam, stirring it from time to time with a long spoon or spatula, for 15-20 minutes. Prepare glass jars - sterilize them. Boil the metal lids.

    Pour the hot jam into the prepared sterilized jars, roll up the lids. Then turn the jars over and wrap them with a blanket for the night. In this way, we additionally sterilize the lids. In the morning, put it away for storage in the cellar, closet or refrigerator.

I advise you not to cook a large portion at once - the mass turns out to be quite thick and can burn when cooking. You can add a little water if your apricots were not soft enough, but then you will have to cook longer to evaporate excess moisture.
To insure against long storage, you can add a little citric acid when cooking, it will also preserve a brighter color of the fruit.
From almost a kilogram of ready-made mashed potatoes, I got about a liter of jam.
Banks can be prepared in various ways. First they need to be thoroughly washed with soda. You can sterilize them in the oven: to do this, put the jars on a baking sheet in a cold oven and turn on a small heating, 150 degrees is enough. Keep the jars for about half an hour. You can sterilize them for a couple. To do this, you will need an iron colander, in which the jar is placed over a pot of boiling water. I boil the lids in a ladle for 5 minutes, then cool them.
