Step-by-step cooking

Cooking time: 1 h
  1. Step 1:

    Step 1.

How to make cinnamon cookies from pita bread? Prepare all ingredients. Instead of cane sugar (demerara), you can use regular white sugar. Thin pita bread can be replaced with several tortillas of Mexican tortilla. Also, to make cookies, take ground cinnamon and high-quality butter.

  2. Step 2:

    Step 2.

Pour cane sugar and ground cinnamon into a small container, mix the loose ingredients well so that the sugar crystals are evenly mixed with ground cinnamon.

  3. Step 3:

    Step 3.

Put the butter in a small ladle, put the ladle itself on the stove and start melting the butter over medium heat. In no case do not bring the oil to a boil, it should not start foaming.

  4. Step 4:

    Step 4.

Remove the thin pita bread from the package, fully unfold it and use a pastry brush to lubricate the surface of the pita bread with melted butter.

  5. Step 5:

    Step 5.

Cut the greased lavash arbitrarily with scissors into squares or rhombuses. If desired, with the help of special molds, you can cut out shaped cookies in the form of stars, flowers and other shapes. However, then, the time for cooking cookies will greatly increase.

  6. Step 6:

    Step 6.

Lower each piece of pita bread with the side greased with butter into the mixture of sugar and cinnamon, press lightly so that the sugar mixture sticks, lift the future cookie and gently shake off the excess sugar-cream mixture.

  7. Step 7:

    Step 7.

Place the cookies rolled in a sugar-cinnamon mixture on a baking sheet. Do the same procedure with the remaining pieces of pita bread. Cookies on a baking sheet can be placed close enough to each other, during baking they will not stick together.

  8. Step 8:

    Step 8.

Put a baking tray with cookies in a preheated 175oC oven and bake them for 6-8 minutes. The duration and temperature of baking may vary depending on the thickness and quality of the pita bread, as well as on the temperature and design of the oven.

It is worth noting that the oil hardens quickly enough and the sugar-cinnamon mixture ceases to stick well to the pita bread. In this case, I recommend putting a ladle in which the butter was heated on low heat, lowering the pieces of pita bread with butter down for a couple of seconds and immediately dipping into the fragrant mixture.

From this amount of ingredients, I got 3 baking sheets of the thinnest cookies.

Butter can be melted in the microwave in the appropriate mode (read the instructions for your device) or in a water bath. How to melt butter in a water bath? You will need two containers of different diameters. Pour water into a large one and put it on the stove. Place the smaller container on top so that it is submerged in water by about half. Put the sliced butter into it. Under the influence of boiling water, the oil will begin to melt. Stir the oil slightly to speed up the process. As soon as the pieces of oil are completely dissolved, remove the container from the stove.

How to choose the right pita bread? First of all, look at the date of manufacture on the package. Do not take expired pastries. Fresh pita bread should have a pleasant smell. Take a good look so that there are no stains and signs of mold on it.
