Step 1:
To prepare the dough, you can use cottage cheese in briquettes, or if you have granular cottage cheese, you can rub it through a sieve or grind it with a blender. It is better that there are no large grains left, so the dough will turn out more homogeneous.
Step 2:
In a deep bowl, I beat two eggs with sugar and salt. I add the prepared cottage cheese and mix the ingredients thoroughly with a hand whisk or mixer.
Step 3:
Then add vanilla and two tablespoons of vegetable oil and mix until a homogeneous mass is obtained. Then I add the sifted flour and baking powder. I knead a soft dough. First with a spatula, and when the dough becomes so thick that it is difficult to mix with a spatula, we shift it to a floured work surface and knead it with my hands.
Step 4:
The dough should be soft. I roll the dough into a sausage and divide it into 8 equal parts. You can also divide the dough into 10 or 12 parts. The smaller the buns are in size, the more they will rise when baking.
Step 5:
I give each piece a rounded shape. Forming buns. (If the balls do not turn out smooth and round, it's okay, they will straighten out during baking.) I put the buns on a baking sheet with parchment paper. I grease the buns with yolk on top and send them to a preheated 180 degree oven for about 20-25 minutes. (The baking time depends on the characteristics of your oven)
