To make Caramel oatmeal cookies, first we need to pour boiling water over the raisins, leave it for a couple of minutes, rinse thoroughly with water, dry with a kitchen towel.
2. Grind the oat flakes into flour using a food processor or blender. Not very small.
3. In a bowl, mix the flour with baking powder, salt and cinnamon.
3. Mix the crushed oat flakes with flour and raisins.
4. Beat butter (at room temperature) with (white and brown) sugar. Add the egg and mix well with a mixer . Beat until the butter-egg-sugar mass is smooth.
5. To the butter-egg-sugar mass, add a mixture of flour with oat flakes. Mix it up.
6. Put the dough in the refrigerator for half an hour to rest.
7. Get the dough out of the refrigerator. With your hands, form cookies from the dough in the form of balls.
From this amount of dough, about 12-15 pieces are obtained. Place the cookies at a distance of about 4-5 centimeters on a baking sheet covered with baking paper. (If you are not sure about the quality of the baking paper, then it is better to lubricate it with butter so that the cookies do not stick.)
In the baking process, it will spread itself. That is why the balls need to be placed at a distance so that they do not stick together with the edges. Now Lightly press the cookies on top.
Bake at 170 degrees for about 20 minutes. To a golden color.
Remove the finished cookies from the oven and leave to cool. Since the middle of the cookie is very soft, when the cookie cools down, it will harden a little.
Fragrant, tender, caramel-flavored oatmeal cookies are ready. This is a quick version of oatmeal cookies from the series " Guests on the threshold "
Raisins can be replaced with any nuts or candied fruits.
Bon appetit!
