Spinach (can be frozen) will be punched in a blender with vegetable oil (the oil will enhance the color and give moisture to the biscuit, it will not be dry).
Sift flour, mix with starch and baking powder.
Beat the eggs in a mixer, add salt, add sugar in the process.
At the end of whipping, after 7-8 minutes, stir in the spinach mixture, lemon zest and flour with starch and baking powder at minimum speed.
Pour the sponge cake directly onto the baking sheet on pastry paper, greased with butter. Spread with a spatula in the shape of a rectangle almost over the entire plane of the baking sheet and bake for 8-10 minutes in the oven at 180-190 degrees.
Let the biscuit cool down by removing it from the baking sheet.Let's get rid of the confectionery paper.
Let's beat the cream cheese a little with lemon juice with a mixer, just a couple of minutes.
Cut the fish fillet into long strips, as far as the piece allows. You can take any fish from the salmon family - pink salmon, chum salmon, salmon, trout, etc. But we choose a beautiful red color.
Smear the resulting cheese cream on the sponge cake layer along its entire plane, lay out pieces of fish on the cheese cream. We spread it horizontally in the middle of the roll in 2-3 rows. The rows should be at the same distance from each other. and roll everything into a roll. We fold so that the rows with the fish lie horizontally, not vertically.
Wrap the roll in plastic wrap and put it in the refrigerator for 1 hour. It is better if it stays in the refrigerator overnight, so it will soak more.
