Step 1:
Prepare the ingredients. Pre-wash, dry and clean the fish. Cut off the fins. Cut along the ridge. Cut each fillet into portions of approximately the same width.
Step 2:
Remove the zest from the lemon and grate on a coarse grater. Combine sugar, lemon zest, sea salt and freshly ground pepper.
Step 3:
Mix everything.
Step 4:
Wash and dry the trout thoroughly. Cut into portions. Put the fish in a foil-lined baking dish with the pulp up.
Step 5:
Sprinkle the trout evenly with the sugar-citrus mixture. Leave to marinate at room temperature for 40 minutes.
Step 6:
Bake the fish on the grill mode in preheated to 200°In the oven for about 15 minutes. Turn off the grill and leave the fish in the cooling oven for another 10 minutes.
