Okroshka with ayran

- Rinse the chicken fillet and put it in a pot. Cover it completely with water and set the pot over heat. Cook for 20 minutes from the moment it boils, then let the fillet cool right in the broth. Once it's cool, take it out and cut it into cubes. 2. Scrub the potatoes well in warm water — the skins should be spotlessly clean. Put them in a pot and cover with water so they're fully submerged. Set over heat and cook until tender, about 25 minutes from boiling. Drain, let the potatoes cool in their skins, then peel and cube them. 3. Put the eggs in a saucepan and cover with water. Set over heat and hard-boil them — that's 6 minutes from the moment they boil. Cool the eggs in cold water and peel them. Separate the whites from the yolks. Cube the whites, and put the yolks in a small bowl, add the mustard, and mash with a fork into a smooth paste. 4. Wash the cucumbers under running water. If they're not the freshest, peel them; if they're young and tender, you can leave the skin on. Trim both ends and cut the cucumbers into cubes. Wash the radishes, trim off the tails, and cut them into small cubes. Wash the green onion and dill, then chop them as fine as you can. Put the herbs in a bowl, sprinkle with salt, and rub them with your hands so they release their juices. 5. Now combine the potatoes, chicken, egg whites, mustard yolks, cucumbers, radishes, and herbs in a large bowl. Mix everything well and salt to taste. Pour in the cold ayran and stir again. Ladle into serving bowls. Garnish with arugula if you like. Enjoy — eat well and with pleasure!
