Take a small saucepan, pour cold water into it, salt and boil. Add butter, carefully pour, stirring continuously, wheat flour. The dough should become homogeneous, take a beautiful glossy shade. We remove it from the fire and cool it so that it becomes warm. Then we drive in one egg at a time, while constantly beating the mass with a mixer. This will be our custard dough. All we have left is to put it with a spoon on a greased baking sheet and bake it in a preheated oven until ready. After the custard eclairs are baked (they will rise and change color), we take them out, cool them and stuff them with cream.
Cream: put milk on the fire (1.5 cups), bring to a boil, pour a glass of sugar. Separately, whisk the egg with a whisk, pour in half a cup of milk, add starch and flour, trying to knead the mixture until smooth. Now the resulting mass is injected into milk with sugar on the stove. Stir all the time and cook until thickened.
