In addition to dried apricots, you can add other dried fruits. Pour boiling water over them for 20 minutes. Then dry and sprinkle with flour, so that they are then evenly distributed in the dough, and do not settle to the bottom of the mold. Pour boiling water over the oat flakes. When they cool down, add bran and sour cream. Carefully stirring, add eggs, sugar, salt, soda, baking powder and vegetable oil. Now it's the turn of dried fruits and zest, carefully mix them into the dough and pour it into a mold pre-greased with oil and dusted with flour. We close the mold with foil and put it in the oven preheated to 180C.
After 40 minutes, remove the foil and, increasing the temperature to 210C, leave the cake for browning for 15-20 minutes. After checking the readiness of the cupcake with a stick, we take it out of the oven. Transfer to a platter and sprinkle with powdered sugar. Oatmeal cake with dried apricots is ready!
