Step 1:

Step 5:
Take a small amount of minced meat, toss it from hand to hand and form round meatballs. Put it in a saucepan. They can be made larger or smaller in size, the amount will depend on the size.
Step 6:
Pour boiling water over the hedgehogs so that they are completely covered, add salt, onion and bay leaf. If you pour cold water, then all the taste will go into the broth, so pour boiling water. I cut the onion into 2 parts, since I did not plan to eat it after cooking, if you plan, then cut it into half rings.
Step 7:
Put the pan on the stove and turn on the heat, wait for boiling and remove the foam. Cook the hedgehogs over moderate heat under a slightly ajar lid for 30 minutes. This time is enough for the meat and rice to be cooked.
Step 8:
Put the finished hedgehogs on a platter.
