If you love puddings, then you should definitely try this curious culinary recipe. The dish is called "Coconut jelly pudding", this is Thai cuisine, so by cooking it, you will add a little South-eastern exoticism to your own kitchen. Let me clarify that this is not a whole large pudding, but small such "puddings" that need to be baked in small special molds. The specified proportion is 4 puddings that need to be cooked at the same time.
We are preparing our pudding dough in a steam bath. Beat eggs and yolks with powdered sugar with a whisk, pour in coconut milk, drop a few drops of rose water. All we need is to dissolve the powdered sugar and get a stable homogeneous mass. After wiping it through a sieve.
Now we warm up the oven to 180 degrees. We take a baking sheet with high walls, pour a little water into it, put four molds, add the prepared mixture to each. Close the oven, leaving it to bake. This will take about 15 minutes. Make sure that the pudding is slightly hardened in the very center – then it is ready. We take it out of the molds, let it cool down, but serve it warm on the table. However, you can also use cold ones – as you like. The food in the end turns out to be simply divine.
