Put the eggs in a container with water at room temperature: if they sink to the bottom, everything is fine, the eggs are the freshest. If any of the eggs float to the surface of the water, it is better not to use it, because the egg is not the first freshness. We will need milk: ordinary cow's milk, but you can also take vegetable milk

    Actually, we have a protein omelet, and based on the name, we will need only proteins. Also, ready-made factory-made egg whites can be used for cooking. In this case, take 100 ml of protein. If you use regular eggs, then you will need to carefully separate the whites from the yolks. I break the egg in half and carefully using the shell, in which I shift the yolk from one half to the other, pour the protein into a separate bowl.

    Don't forget to wash the eggs well beforehand, as their shells contain a huge amount of bacteria. Put the yolks aside, cover with a film and put them in the refrigerator. In this form, they are stored for up to a week and can be used in baking and other dishes. Add salt to the proteins, do not put a lot of salt - after all, the dish is dietary! I use ordinary sea salt, but according to your taste it can be salt with different additives.
