Step-by-step cooking

Cooking time: 2 h
  1. Step 1:

    Step 1.

First you need to prepare the dough. To do this, you need to take a deep container. Pour boiling water into it, add salt and mix. In the already salted boiling water, sift the flour and knead the dough. Then transfer it to the work surface And continue to knead the dough for another 7-8 minutes. Next, the dough should be wrapped with cling film or put in a plastic bag and leave the dough to rest for 30-40 minutes.

  2. Step 2:

    Step 2.

Now you should prepare the filling itself. Pork, beef and chicken fat should be cut into pieces and passed through a meat grinder. Peel the onion and chop it as small as possible. Add the onion to the minced meat, mix all the ingredients.

  3. Step 3:

    Step 3.

Next, add a little water, salt and ground black pepper to the minced meat with onions. Mix all the components of the filling thoroughly.

  4. Step 4:

    Step 4.

Now you can start modeling manta rays. To do this, take a piece of dough and roll it out into a thin layer.

  5. Step 5:

    Step 5.

Using a metal mold or, for example, a saucer (I used it), cut circles out of the dough. I have a diameter of a piece of dough equal to 13 cm, since it seems to me to be the ideal size, but you can cut circles of a different size. For example, I make one manta ray from a piece of dough with a diameter of 9 cm. and you will see a huge difference between them. As for me, it already turns out not manti, but large dumplings.

  6. Step 6:

    Step 6.

Put the meat filling in the center of each piece of dough. Next, you need to make manta rays.

  7. Step 7:

    Step 7.

First, pinch the edges in the middle.

  8. Step 8:

    Step 8.

Then pinch the two side edges, connecting them to the previously made pinch in the center.

  9. Step 9:

    Step 9.

Now you need to connect the edges together. The first manta ray is ready. Now it remains to make the rest. Put the molded manta rays on a thin plastic board without sprinkling it with flour, since it is then very easy to remove the manta rays from it. If you do not have such a board, then sprinkle it with flour before laying out the manta rays.

  10. Step 10:

    Step 10.

Then place the manta ray board in the freezer.

  11. Step 11:

    Step 11.

Lubricate each section of the steamer with vegetable oil, then lay out the manti. Cook manti in a steamer for 45 minutes. Ready-made mantas are best served to the table with sour cream, to which, if desired, you can add chopped garlic.

Manty is a flour dish of Oriental cuisine, the main components of which are unleavened dough and minced meat. This is a very tasty, but quite satisfying dish, in which the meat filling is wrapped in dough with patterned pinches. Also an important ingredient of this dish is chicken fat. But it can be used at will, as it has a specific flavor that not everyone likes.
