Use short-grain polished rice for a creamier porridge. Rinse it thoroughly, changing the water several times until it runs clear, to wash off every bit of dust.

Rinse the dried apricots well under running water, then put them in a bowl and cover with boiling water. Let them sit for 15 minutes to plump up. Drain, pat dry with paper towels, and cut into small pieces.

Put the rice in a pot and add hot water. Set it over the heat. The key is getting the rice-to-liquid ratio right so the porridge turns out creamy and the rice cooks down well: for 1 cup of rice, use 2 cups of water and 1.5 cups of milk. When the water boils, add salt to taste and stir. Lower the heat to its minimum, cover, and cook for about 20 minutes—by then almost all the liquid should have evaporated.

Pour in the milk, stir, and cook for about 5 more minutes.

Then add the dried apricots and sugar to the porridge—adjust the sugar to your taste. Stir and cook for another 5 minutes, then turn off the heat.

Add a pat of butter to the pot. Cover, wrap it in a warm towel, and let it rest for 15 minutes "under a blanket."
