Vegetable Purée Soup

A silky vegetable purée soup with a creamy flavor. This vegetable purée soup makes a full, satisfying lunch. Rich and aromatic with creamy, cheesy notes, it's both delicious and filling. Cooking method

    Finely chop the peeled onion and lightly sauté it in a little vegetable oil.

    Peel the potato and carrot and cut them into small cubes.

    Cut the pumpkin the same way.

    Seed the bell pepper and cut it into rough pieces.

    Add all the vegetables to the pot with the sautéed onion and pour in the broth. Bring to a boil and season with salt.

    Simmer the vegetables over low heat until soft.

    Purée with an immersion blender. I also pushed the mixture through a sieve to remove the bits of pepper skin, which made the purée even smoother and silkier—but that's optional.

    Stir nutmeg into the purée, plus other spices if you like.

    Pour in the cream and stir. Warm it over medium heat, stirring often.

    Add the finely grated cheese and stir well. Bring the soup to a boil, stirring so the cheese melts in.

    Cover the pot and let the soup rest for 10–15 minutes. Serve the purée soup hot with fresh herbs.
