Duck in plum sauce with a crispy crust – how delicious it sounds! In fact, this food not only sounds and looks appetizing, but the taste of this dish is excellent. The name itself is already asking to cook it quickly, in order to enjoy this delicious dish with pleasure. The dish itself came to us from Chinese cuisine. And the cooking recipe is quite simple. First, fry the grains of Sechuan pepper in a frying pan with the addition of sea salt, while stirring constantly until the salt changes its color. pour the dried spices into the mortar and grind thoroughly. Defrosted duck is gutted and thoroughly smeared with our mixture of pepper and salt, it is necessary to rub the mixture into the duck thoroughly. Then we put the bird in a steamer and leave it there until ready, and after holding it in a draft for a while, we cool it in the refrigerator. Pour water into a saucepan, add sugar, mix thoroughly and bring to a boil. Then add the prepared star anise and plums to the syrup, which we peel from the seeds and cut in advance. Squeeze the juice out of the lime and add cinnamon sticks there. We pour this mixture over our duck. Then we cut the duck into portions, preferably removing all the bones. We roll the pieces of duck in breadcrumbs and put them in deep-frying for 2 minutes to form a crispy crust. Amazing food is ready!
