Step-by-step cooking

Cooking time: 30 min
  1. Step 1:

    Step 1.

We take all the necessary products from the list.

  2. Step 2:

    Step 2.

We start cooking the tortilla immediately with the preparation of cheese: rub both pieces and mix them.

  3. Step 3:

    Step 3.

Now let's get down to the dough. Pour kefir into a deep bowl and add a pinch of soda - it should foam slightly.

  4. Step 4:

    Step 4.

Then sift flour into a separate container, add egg and foaming kefir to it.

  5. Step 5:

    Step 5.

I do not advise you to pour out all the flour at once - the dough for a flatbread with cheese is a little sticky. Therefore, it is better to add part of the flour while kneading the dough and making tortillas.

  6. Step 6:

    Step 6.

Divide the dough and filling into equal parts. Usually Turkish cooks cook large tortillas, but I like to cook very small ones - just for a couple of bites, and small tortillas are prepared a little faster. Roll out the dough into thin sheets.

  7. Step 7:

    Step 7.

We spread the cheese filling in the middle, roll up the dough and fasten the edges of the tortilla. I used to use a rolling pin, but now I've got the hang of making tortillas by hand. It's even easier this way, because you need to keep an eye on the edges of the tortilla, which should be thinner than the middle. Now flatten the tortillas with cheese with the palm of your hand.

  8. Step 8:

    Step 8.

We put the formed tortillas on a heated frying pan and fry them on both sides. The thinner the tortillas are, the tastier they are.

  9. Step 9:

    Step 9.

Ready-made tortillas are still hot, be sure to lubricate with butter before serving.

  10. Step 10:

    Step 10.

    Bon appetit!

I remember the taste of flatbread with cheese since childhood. In fact, our craftsmen hardly got the culinary recipe for this delicious baking in Turkey, it was there that they shared with them the secret of how to fry tortillas with cheese and herbs in a frying pan. In Turkey, spinach is added to them and eaten for breakfast or a snack at work. And Turkish kids love this delicious food. I usually cook tortillas in the evening, but they don't always survive until morning. And sometimes I make tortillas with cheese for guests - I lightly sprinkle the dough and add more fresh herbs to the filling. Just the perfect food for friendly gatherings with beer or weak wine, or you can use them just with tea!
