Step 1:
Preparing the dough. To do this, we heat the milk to a temperature of 35-38 degrees, pour it into a suitable bowl, pour yeast, sugar and 100 grams of sifted flour. Mix everything until smooth. It turns out that the dough is as thick as the dough for pancakes. We leave it to ferment for 10 minutes.
Step 2:
When the dough increases, pour in the rest of the flour - it needs to be mixed with salt in advance and sifted so that it is saturated with oxygen. We begin to knead the dough with a spoon or silicone spatula. Gradually, the dough will gather into a lump. It is better to pour the flour in several steps so as not to overdo the dough.
Step 3:
Knead the dough on the work surface for 7-10 minutes until it is elastic and smooth. It should be soft and pliable. We form a bun from the dough, cover it with cling film and let it come up within 1 hour.
Step 4:
For the filling, I used mashed potatoes mixed with overcooked onions - it is with this filling that you can make pies flat and thin.
Step 5:
We crumble the dough that has come up, form a sausage from it and divide it into 8 equal pieces with a knife. That's how many medium-sized pies we will get.
Step 6:
Take a piece of dough, lightly press it with your hands and form a small cake, spread the filling in the middle - a tablespoon with a slide. So we prepare all the pieces.
Step 7:
We bend the opposite edges of the cake to each other and fasten them together by pinching. Then we press down the pie with our hands so that it becomes as flat as possible.
Step 8:
Pour vegetable oil into the pan, warm it up and fry the pies on both sides for 1-2 minutes on medium heat. The dough is quite thin, so the pies will cook quickly. Fry all the pies.
Step 9:
I was frying in two pans at once, so I coped quickly. These are the pies turned out.
