This recipe offers to prepare this not everyone's favorite berry in the form of a delicious, beautiful and healthy treat. It turns out to be really tasty, and if you take into account the huge benefits of mountain ash, it's just surprisingly useful.
We begin by carefully sorting the berries, washing, drying and separating them from the petioles. We put them in a large enameled saucepan.
Pour the specified amount of water into another pot of a suitable size. Put the pan on high heat, bring the liquid to a boil. When this happens, put salt in boiling water, mix. Boil the salt water for a few more minutes, and then pour the prepared red mountain ash with the solution. We leave it in this form for 5 minutes.
When this time has passed, we throw everything into a colander, waiting for the excess liquid to drain. Next, we return the rowan to the pan, rinse it with boiled water and knead it. You can do this with a pestle (pusher) for potatoes, or you can simply grind it with a blender in mashed potatoes.
We put granulated sugar in the resulting berry mass, mix everything thoroughly, cover it with a lid and put it in the refrigerator for 6 hours (or you can keep the future delicacy like this all night). During this time, all sugar crystals should dissolve. If this does not happen, mix everything again very carefully and again put the berry mass in the refrigerator for several hours. You can even mix everything up a couple more times during this time.
Sterilize jars and lids. It is better to take small jars to open the treat in small parts. We put the rowan puree into the prepared jars, close them hermetically with lids and put them in a cool place for storage. You can try the delicacy right away, but be sure to keep it cool, ideally in a refrigerator.
