1. We will prepare containers for the construction of a water bath, for this we will need two pots of larger and smaller diameter. In a saucepan, the larger one, pour water (you need a little water so that the pan is filled with about 2-3 fingers), send the pan to the fire, let the water boil.

2. In a smaller container, we spread the chocolate, having previously broken it into pieces. The smaller the pieces are, the faster the chocolate will melt. We install a small saucepan with chocolate on a large one, its bottom should not come into contact with water. We make the fire minimal! Using a wooden or silicone spatula, we stir the chocolate as it melts, that is, you do not need to constantly stir, but about every 30-40 seconds.

3. At this stage, if necessary, you can add additional ingredients, cream or butter to the chocolate. We cool the chocolate to a temperature of 36 degrees directly in a water bath, just turn off the fire and leave it for a while.
