To make this lecho, you need peppers, carrots and onions. Instead of tomatoes, you can use the usual tomato paste. To make the lecho not only delicious, but also beautiful, buy pepper of different colors. So, first it needs to be washed and cleaned of seeds. Then cut the pepper into strips. Grate the carrots. After that, peel all the onions and cut them into half rings.

After that, take a saucepan. We will make brine for lecho. To do this, dissolve sugar and salt in water. Then add the oil and vinegar. Stir in the tomato paste. Pepper to taste. Put the bay leaf. Put the pan on the fire. Bring it to a boil. Let it boil for five minutes. Then put the onion, carrot and pepper in this mixture. Cook them for 15 minutes. During this time, wash all the cans and prepare them for canning. Put the lecho in jars and roll it up. Bon appetit!
