Rice Porridge with Water and Milk
Creamy, thick, delicious — for a hearty family breakfast! Rice porridge with water and milk is popular in nearly every household; grown-ups and kids alike love it. For variety, you can stir in any add-ins you like: raisins, dried apricots, other dried fruit, candied fruit, nuts, or fresh or frozen berries and fruit.

Step 1:
How do you make rice porridge with water and milk? Gather the ingredients. Choose short-grain rice for the porridge — it has more starch and cooks down better, giving the porridge a pleasant, creamy thickness. The proportions of milk and water can vary; I use 50/50. Choose whatever fat content of milk you like.

Rinse the rice in cold water, then drain off all the excess water.

A non-stick pot works best for cooking — the porridge won't stick to that kind of surface. Pour the water into the pot and set it over the heat. Bring the water to a boil and add the rinsed rice. Stir and bring it back to a boil. Cook the rice over low heat, stirring, until it absorbs all the water. This takes 5–7 minutes.

Then pour the hot milk into the rice and stir. Add salt and sugar to taste.

Cook the porridge for another 10 minutes. Adjust the thickness to your taste by adding hot milk or water — the more liquid you add, the looser the porridge. When the rice is soft, take the pot off the heat and let the porridge rest, covered, for another 10–15 minutes.

As it rests, the porridge thickens further. Even once it's rested, you can add hot liquid if needed. The rice porridge is ready! Spoon it into bowls, add a pat of butter, and dig in! Enjoy!
- For making it, it's best to use filtered or bottled water with a neutral taste. If you use tap water, keep in mind that it can give the dish an unpleasant off-flavor.
