Kefir and Gelatin Dessert
Tasty, simple, budget-friendly, and made from natural ingredients! This kefir and gelatin dessert is a light, delicate set "jelly" based on two dairy products, topped with chocolate cookies. It comes together in no time, though it needs a while to set.

Step 1:
How do you make a kefir and gelatin dessert? It's easy! First, gather your ingredients. Choose good-quality dairy — any fat content works, just keep in mind it affects the calories. I'm using 3.2% kefir and 20% sour cream. Adjust the sugar to taste. You can swap the vanilla extract for 1 tsp of vanilla sugar or a pinch of vanillin.

Step 2:
Soak the gelatin in 1/4 cup (40 ml) of cold water and let it swell for 10 minutes. Then dissolve it over low heat, bringing it almost to a boil but not boiling. With the amount of gelatin in this recipe, the dessert sets firm but still pourable — like a springy cream. If you want it firmer, add another 1 tablespoon of gelatin.

Step 3:
In a bowl, combine the kefir, sour cream, sugar, and vanilla. Beat with a mixer on low speed for about 3 minutes. The mixture will be pourable, with lots of tiny air bubbles.

Step 4:
Without stopping the mixer, pour in the dissolved gelatin in a thin stream. Keep beating for about 3 more minutes. The mixture will stay pourable.

Step 5:
Pour the mixture into dessert cups or glasses. Mine made enough for 2 cups and 2 glasses — 4 servings in all. Refrigerate the dessert for 1–2 hours until set; it will firm up during that time.

Step 6:
While the dessert sets, break the Oreo cookies into pieces. I used classic cookies with plain white cream, but you can use others — strawberry or chocolate flavored, say. You can also swap the Oreos for any cookies you like.

Step 7:
Once the dessert has set, scatter the broken cookies over the top.

If you like, add fresh or frozen berries and a little mint. Enjoy!
