Baked Pelmeni in Pots with Mushroom Sauce

Surprise your family with a wonderful dinner—and have fun making it! Everyone in my house loves pelmeni (Russian meat dumplings). They seem like an everyday dish… but you can still wow people with them! How? It's simple: bake them under a creamy mushroom sauce.

  • Start with the filling: rinse the chicken and cut it into pieces, then grind the meat and the pork fatback through a meat grinder. Peel the onion and grind it to a pulp (a blender, meat grinder, or grater all work). Add salt, pepper, and a couple of crushed ice cubes to the ground meat and mix well. Next, the sauce: rinse the mushrooms, let them dry a little, and slice them. Peel the onion, cut it into half-moons, and add it to a skillet with a splash of vegetable oil. Fry the onion until translucent, add the mushrooms, and cook for another 5 minutes. Pour in the cream and simmer 4–5 minutes more. Now the dough: sift the flour into a bowl, crack in the egg, add salt and vegetable oil, and pour in the water. Knead a dough that doesn't stick to your hands, then let it rest for 20–30 minutes. Shape the pelmeni with a dumpling mold or by hand. Boil them in salted water for 5 minutes, lift them out with a slotted spoon, and divide them among individual baking pots (ramekins or mini Dutch ovens). Spoon the mushroom sauce over the pelmeni and top with finely chopped dill and grated cheese. Bake the pots at 400°F (200°C) for 15 minutes. The cheese will melt, the dumplings will fill the whole house with their aroma, and your family will drift into the kitchen without needing an invitation. Enjoy!
