Ossetian Beef Lyvzha (Beef & Potato Stew)

A hearty meal—Ossetian beef lyvzha. Like so many dishes from the Ossetian kitchen, lyvzha is filling and wholesome, built from meat and vegetables. Because it's made with just a little broth, it lands somewhere between a soup and a main course.

  • Today I want to share a recipe for a wonderful Ossetian beef lyvzha. Lyvzha is a national dish of the Ossetian kitchen, and you'll want a 5-quart (5-liter) pot to make it. Rinse the beef well, then cut it into fairly large chunks (about 1 1/4 inches / 3 cm). Put the meat in the pot, cover with 3 quarts (3 liters) of cold water, and set it over the heat. Bring to a boil and skim off the foam thoroughly so the broth stays clear. (You can also lower the meat into already-boiling water—there'll be less foam and it's easier to manage.) If you can't get the broth clean, strain it; it really should be clear. Drop a whole peeled onion into the simmering broth and cook the meat with it, covered, over medium heat for an hour and a half. Meanwhile, prep the rest of the vegetables: cut the potatoes into large wedges, the carrot into thick matchsticks, and the second onion into half-moons; finely chop the garlic and dill. Salt the broth and add the chopped onion. At this point you can fish out the whole onion that's been simmering, or leave it in until the end. After the onion goes in, add the carrot and cook everything for 15 minutes. If you haven't pulled out the whole onion yet, now's the time—take it out. Add the potato wedges. After 20 minutes, add the herbs and spices, then let the fragrant stew finish over low heat, covered, for another 10–15 minutes. Serve lyvzha with the Ossetian sauce tsakhton: just stir crushed garlic and chopped dill into sour cream—the richer the sour cream, the better the lyvzha. Classic Ossetian churek flatbread is the perfect partner, but plain dark bread won't let you down either. Enjoy!
