- Beshbarmak with lamb is a Kazakh national dish. The traditional recipe is made with lamb, horse meat, and beef—but for understandable reasons, not everyone is on board with that lineup, so I use only beef and lamb. Cut the meat into chunks (roughly kebab-sized), put it in cold water, bring to a boil, and lower the heat. Add salt, a bay leaf, and a whole onion, and simmer over low heat until tender. The meat takes a while to cook; meanwhile, knead the dough and let it rest a bit. Then roll it out and cut it into thin squares about 3 inches (8 cm) across. By now the meat is usually done—take it out and set it aside, covered. Next, slice an onion into rings and chop the herbs, not too fine. In a fresh pot, layer the onion and herbs along with salt, pepper, and seasonings, pour in some of the broth, and boil briefly. Drop in the dough squares and cook until done. That's it—beshbarmak is ready! Serve it on a platter, with the dough squares spread out and the meat piled on top. And don't forget: beshbarmak is eaten with your hands. :)
