Classic Pork Borscht

A traditional Ukrainian dish. Give it a try—it's delicious! My grandmother lives in Ukraine and makes a wonderful pork borscht. So tasty, and really filling. I cook it from her recipes, and mine turns out pretty well too. It's all very simple—not a 10-minute job, true, but the result is well worth the time.

  • The amounts are for a 3-quart (3-liter) pot.
  • Rinse the pork well and use it to make a broth: put the meat in a pot, cover with cold water, and add salt and the spices—coriander, red pepper, and bay leaves. Simmer for about an hour, skimming off the foam now and then.
  • Meanwhile, while the broth cooks, prep the vegetables:
    • peel the onion and chop it very fine;
    • peel the beet and cut it into thin strips;
    • peel the carrot and cut it into thin strips as well;
    • seed the bell pepper and cut it into strips;
    • peel the potatoes and cut them into cubes.
  • Put the beet in a deep skillet and sauté it in vegetable oil, then add the carrot, onion, and bell pepper. Thin the tomato paste with a little water, pour it in with the vegetables, and simmer until the beet is tender.
  • Once the meat is tender, take it out of the pot and shred it. Add the potatoes to the broth and cook until done, 15–20 minutes. In the meantime, shred the cabbage and add it to the borscht along with the vegetable sauté and finely minced garlic.
  • Taste the borscht and add sugar and salt if needed.
  • Let it rest for 15 minutes, then serve, adding a dollop of sour cream and a sprinkle of chopped dill.
