- For the best jam, choose ripe yellow plums with no spoiled or rotten spots. Rinse the fruit well in cold running water and dry it, spreading it out on a baking sheet lined with a sturdy paper towel to soak up the water. Put the washed, dried plums in a large heavy-bottomed pot (so the jam won't scorch) and pour in a little room-temperature water. Set the pot over low heat and warm the fruit until the plums burst and the pits loosen. Take the pot off the heat and remove all the pits. Return the pot to the stove and add the sugar. Over moderate heat, stir constantly with a spatula or large spoon until the sugar fully dissolves. Add the ground cinnamon and mix well — it gives the finished jam a warm, fragrant note. Keep cooking until the jam thickens to the consistency you want. To test it, drop a little onto a plate: if the drop holds its shape, the jam is done and you can take it off the heat; if it spreads out, keep cooking.
- Ahead of time, or while the jam cooks, prepare your jars. Wash the glass jars well inside with baking soda, then sterilize them over steam or in the oven, and boil the lids separately. Pour the hot plum jam into the sterilized jars and seal tightly right away. Set the jars upside down on a flat surface and wrap them in a warm blanket. Let them cool completely, then move them to a dark, cool spot, where they'll keep for a year. Happy canning!
