Spicy Lecho for Winter

A zesty lecho to put up for winter! A great dish for the cold months — a fiery pepper relish that livens up the winter table and warms you with its spicy kick. It's the classic pairing of sweet bell peppers with a measured amount of hot chile and garlic in a tomato sauce.

  • Lecho isn't a complicated thing to put up for winter, and it works as a salad or as a sauce for other dishes. Start by prepping everything so nothing slows you down once you're cooking. Wash and dry the tomatoes, remove the stems, and cut them into small pieces — they'll get blended anyway, so the exact shape doesn't matter. Trim the stems and seeds from the bell peppers and the hot chile; it's easier to rinse them once they're already cleaned, to wash away any leftover seeds. Wear gloves when handling the chile, and remember it can give off irritating fumes when it meets water. Set the peppers aside to air-dry. Peel, wash, and dry the onion and garlic. Cut the onion into small dice or thin quarter-rings, and press the garlic — better not to chop it by hand; between the press and the blender, there won't be any stray pieces in the finished lecho and the flavor will spread evenly. In a blender, combine the cut tomatoes, hot chile, and garlic, and purée until completely smooth. Cut the sweet bell peppers into large chunks. Pour the spicy tomato purée into a heavy-bottomed pot and add the onion and bell peppers. Season with the salt and sugar and pour in the vegetable oil. Set the pot over medium heat and bring to a boil. As soon as it boils, lower the heat to a simmer and reduce for 30 minutes. A few minutes before it's done, stir in the vinegar so the acidity is evenly distributed. Sterilize your jars ahead of time — in the microwave, the oven, or the classic way in boiling water. Spoon the lecho into the jars, seal, and turn them upside down onto their lids. Wrap them in a blanket or thick towel, leave until completely cool, and store away for the winter. Enjoy!
