Veggie Pasta with Ground Turkey and Parmesan
Pasta for dinner is ALWAYS a winner — and easy on the budget, too! This dish is a great option for a hearty, wholesome dinner, made with spaghetti, bell peppers, cheese, and a handful of seasonings.
Cooking method
-
Step 1:
Gather your ingredients. Stir the grated carrot into the ground turkey, and peel the tomatoes — drop them into boiling water for two minutes first to loosen the skins.
-
Step 2:
Turn on the stove and set a pot of water and a skillet with the olive oil over the heat. Chop half an onion, not too fine.
-
Step 3:
Add the chopped onion to the hot skillet and sauté it lightly, stirring.
-
Step 4:
Cut the bell peppers into small, roughly even cubes.
-
Step 5:
Add the diced bell peppers to the skillet.
-
Step 6:
Stir the peppers in well with the onion and let them soften.
-
Step 7:
Finely chop the dill.
-
Step 8:
Mince the garlic cloves and cut the tomatoes into small pieces.
-
Step 9:
Add the chopped vegetables to the skillet.
-
Step 10:
Stir all the vegetables together well and keep simmering.
-
Step 11:
Salt the boiling water to taste and gradually add the spaghetti, stirring as it cooks so the strands don't stick together.
-
Step 12:
Grate the Parmesan on the fine side of a grater, and transfer the cooked vegetables from the skillet into a separate bowl.
-
Step 13:
Add a little more olive oil to the skillet and brown the ground turkey.
-
Step 14:
Cook the turkey in the skillet for 10 minutes, season with sea salt and black pepper to taste, then stir in the cooked vegetables along with the tomato paste.
-
Step 15:
Stir all the ingredients together well and simmer for another 10 minutes.
-
Step 16:
Plate the spaghetti (cooked for 10 minutes), top with the turkey and vegetables, sprinkle with grated Parmesan, and serve for dinner.
- The first time you make this Italian-style spaghetti for dinner, you'll want to make it again and again — it's that simple and that delicious! The key is to use durum wheat pasta and to have your seasonings and Italian-pantry ingredients on hand. Almost all classic Italian dishes are built on dough and pasta, plenty of cheese and dairy, fish, meat, herbs, spices, vegetables, and grains. Before cooking the spaghetti, pick a tall, deep pot. Once the water is at a rolling boil, lower the pasta in and fan it out so the strands stand up along the sides; as they soften, gently press them down until they bend and slip fully under the water, so they cook evenly. Good durum wheat pasta takes no more than 10–12 minutes, and you'll want to stir it a few times so it doesn't clump. Soft wheat pasta, on the other hand, turns mushy fast, so check the package and stick to the recommended cooking time.
