Cherry Plum and Apple Compote for Winter

  • Start by sorting through all the cherry plums, picking out any that are bruised or overripe — those won't work for compote, but you can save them for jam. Rinse the plums well to wash off any dirt and dust, then spread them out on a clean towel to dry. Wash the apples too, pat them dry, cut them in half, and scoop out the cores and seeds, then slice into medium wedges. Now get your jars ready: wash glass jars (use three 1-quart jars or one large 3-quart jar) with dish soap and rinse them with boiling water, then sterilize. Set them upside down on a baking sheet in a cold oven, turn it to 210–250°F (100–120°C), and hold for 10–15 minutes once it comes up to temperature. Put the lids in a saucepan, cover with water, and boil for 5–10 minutes. Once the jars are sterilized, drop the apple slices into the bottom of each one. Bring a pot of water to a boil, then pour it into the jars until the apple slices are covered. Cover with the lids and let stand for 15 minutes so the apples steam and soften. Carefully pour the water back into the pot, add the sugar, and bring it back to a boil, stirring until the sugar fully dissolves. Meanwhile, add the rinsed cherry plums to the jars with the steamed apples — don't pack them in too tightly; leave room for the syrup. Pour the hot sugar syrup over the fruit all the way to the top and immediately seal with the sterilized lids. Turn the jars upside down on a sturdy surface and wrap them in something warm. Leave them like that until they cool completely, then move them to a dark, cool spot where they'll keep all year long. Happy canning!
