- Peel the onion, rinse it under water, pat it dry, and slice it into thin half-moons. A salad-style red or purple onion is the best choice here: it's good for you, and it looks far more striking in the finished salad. Put the sliced onion in a deep bowl and cover it with boiling water for a couple of minutes — this draws out any harsh bitterness. Drain off the hot water, then toss the onion with the vinegar to quick-pickle it. Stir and let it marinate for about 30 minutes.
- Rinse the chicken hearts thoroughly under cold running water and drain them in a colander. Put them in a saucepan and cover with fresh water. Set the pan over the heat, then add salt, the allspice, and the bay leaf. Once the water comes to a boil, simmer the hearts until tender, about 30–40 minutes. Drain and let them cool to room temperature.
- Rinse the parsley and green onion in cool water and dry them on a paper towel. Chop the herbs as finely as you can.
- Once everything is ready, put the salad together. Slice the cooled chicken hearts into rings and drop them into a bowl — pick a roomy one so it's easy to toss everything later. Drain the excess liquid off the pickled onion and add it to the bowl along with the chopped herbs and the mayonnaise, then stir to combine. Taste and adjust with salt and ground black pepper to your liking. Your chicken heart salad with pickled onion is ready! Garnish with a few fresh parsley sprigs before serving. Enjoy!
