Many cooks swear by a quick spritz of nonstick spray — it keeps the mixture from sticking to the bottom and sides of the pan, and stops the set candies from clinging to the parchment.

  • You'll need lollipop sticks, which you can pick up at any baking-supply store. For neatness, it's nice to wrap each finished lollipop — clear cellophane works well. You'll also want a candy thermometer; it's worth owning if you like to cook, and you'll reach for it again and again. 1. Prepare a baking sheet, lining it with white parchment paper. A non-white one is fine too, as long as it's good quality. 2. Lay the sticks out on the sheet to save space — set the candies along the edge with the stick tips meeting in the center. 3. Pour the corn syrup into a heavy-bottomed saucepan and add the sugar. 4. Set the pan over medium heat and stir until the sugar is completely dissolved. 5. Once the mixture comes to a boil, clip in the thermometer and cook, stirring often, until it reaches 300°F (150°C). 6. The moment it hits temperature, take the pan off the heat immediately. 7. Stir the cherry gelatin into the hot syrup, mixing quickly. 8. Using a metal dessert spoon, pour the mixture onto the tip of each stick. Work fast, since it hardens quickly. You can stand the finished lollipops up in a glass weighted with a bit of dried grain or rice — they look so pretty that way! And it's a good idea to wrap each one so they don't stick together.
