Potatoes with Hunting Sausages

- This dish is easy enough for a beginner to pull off. Start with the potatoes: wash, peel, and cut them into wedges. Put them in a medium saucepan and add enough cold water to cover them completely. Salt the water, set the pan over high heat, and bring to a boil. Once it boils, lower the heat and simmer the potatoes for about 15 minutes, until tender. Drain and set aside.
- While the potatoes cook, slice the bacon into thin strips. Heat a cast-iron skillet over high heat, then lower it to medium. Lay in the bacon and fry on both sides — no oil needed, the bacon renders plenty of its own fat. Remove the crisp bacon and set it aside, leaving the fat in the pan.
- Cut the hunting sausages into large chunks. Peel and thinly slice the red onion, reserving a little for garnish. Add the sausages and onion to the hot bacon fat and cook over medium heat, stirring, for 4 minutes. Stir in the vinegar, sugar, and about a third of the chopped parsley, then cook over low heat until almost all the liquid has cooked away.
- Add the drained potatoes, toss everything together, cook for one more minute, and turn off the heat. Let it cool slightly, then fold in the thinly sliced pickles. Finish with the remaining chopped parsley and the chopped green onion, season with salt and pepper to taste, and scatter the reserved red onion on top. Serve warm. Enjoy!
