    1. Core the apples and cut them into wedges. 2. Lay the currant leaves on the bottom of the jar. Pack in the cucumbers snugly, tucking apple wedges in between. 3. For the brine, bring 1.5 liters (about 6 cups) of water to a boil with 1.5 tablespoons each of salt and sugar. Fill the jars with boiling brine, let stand 5 minutes, drain, and repeat a second time. 4. On the third round, fill the jars with brine and seal them.
  • My mother-in-law won't touch anything pickled or brined — but she gobbles up these cucumbers with apples all winter long!
