Pasta with Porcini Mushrooms

A pretty, hearty, quick dish made from simple ingredients for the whole family! My family loves pasta and mushrooms and anything made with them, so I figured — why not combine two favorites? I had porcini in the freezer from last season, and since they're so meaty, the dish turned out really filling. And if you leave out the sour cream, it makes a wonderful Lenten dish too!

    First, set a pot of water on the stove.

    Crush the garlic with the flat of a knife and chop it.

    Add it to a skillet with heated olive oil.

    Finely chop the onion.

    By now the garlic has released its aroma — add the onion and sauté until golden.

    Add the mushrooms and sauté for another 7-10 minutes.

    Meanwhile, the water has come to a boil — salt it, add a drop of olive oil, add the pasta, and cook until al dente.

    Next, add the dry white wine to the mushrooms. You can skip it, of course — but it's the wine that, almost like magic, turns this simple dish into something special. Let it cook down for 2-3 minutes.

    Then add the sour cream (mascarpone is ideal). Heat for another couple of minutes.

    The pasta is done by the time the mushrooms are ready — drain it in a colander.

    Add the pasta to the mushrooms.

    Toss to combine and leave it covered for 1 minute.

    Meanwhile, grate the Parmesan on the fine side of a grater (any hard cheese works).

    Sprinkle the pasta with the grated Parmesan and turn off the heat.

    Cover with a lid and let it sit for 2-3 minutes.
