Cooking method
- This recipe involves cooking the potatoes and a separate garlic sauce served alongside. The dish comes to us from Bulgarian cooking and is a favorite of anyone who's in on it. Today I'll share the method with you, and it's very simple. Peel the potatoes, rinse them, and cut them into cubes — not too small, so they don't fall apart while cooking. Cook them over moderate heat until fully tender. Once cooked, drain the potatoes well and arrange them on a plate. Scatter plenty of finely chopped fresh herbs over the top. Then make the garlic sauce — even easier: crush the garlic and mix it with sunflower oil, salt, and vinegar (use as much vinegar as you like). Serve the potatoes on a plate with the garlic sauce in a separate little dish. Potatoes with garlic can be eaten on their own or as a side for meat and fish.
