These are my favorite noodles!
- Pasta with cottage cheese is a love-it-or-leave-it dish, but my husband swears it's the best lunch there is — quick, filling, and delicious. That said, I don't think it works without homemade pasta. It's best to make the noodles ahead of time: it's a fairly labor-intensive job, and they need a few hours to dry. Sift the flour and mix it with the salt and a beaten egg. The dough should be very stiff, so add the water very carefully — and don't worry about working in plenty of flour. Once the dough is firm and smooth, roll it out as thinly as you can and cut it into thin strips. Spread the noodles on floured baking sheets and let them dry completely, then cook them as you would any pasta. While the pasta boils in lightly salted water, press the cottage cheese through a coarse sieve. For the finishing touch, toss the cooked pasta with melted butter and stir in the cottage cheese. Feel free to use a high-fat cottage cheese — its rich, buttery flavor pairs beautifully with the noodles. The dish is even better if you fold the cottage cheese into the pasta while it's still hot and scatter plenty of finely chopped fresh herbs on top.
