Pasta with cottage cheese is an amateur meal, but my husband thinks it's the best dish for lunch. Fast, satisfying and delicious. But I think that the recipe for pasta with cottage cheese will not be delicious without homemade pasta.
It is better to cook pasta in advance. This is a rather laborious process and they dry for several hours.
So, I mix the sifted flour with salt and a broken egg. The dough should be very steep, so I add water very carefully, but there is not much flour for pasta with cottage cheese. As soon as the dough has become stiff and homogeneous, I roll it out very thinly with a rolling pin and cut it into thin plates.
Now the pasta needs to be dried on floured baking sheets until completely solidified, and the dried pasta can be cooked as always. And while the pasta is cooked in slightly salted boiling water, I grind the cottage cheese in a large sieve.
Well, the finishing touch – cooked pasta should be mixed with melted butter and add cottage cheese. Cottage cheese can be taken very fatty – a delicate buttery taste goes well with pasta. Pasta with cottage cheese will turn out even tastier if the cottage cheese is mixed with hot pasta and sprinkled liberally with finely chopped herbs.
