Salmon Ukha (Fish Soup) with Potatoes, Carrots, Onion, and Herbs

A wonderful fish soup! Tasty, filling, and easy on the wallet! This is a nice, uncomplicated salmon ukha. The star, of course, is the salmon itself — it looks especially appetizing made with a freshly caught fish rather than store-bought. Your family will love it, as long as they don't have anything against fish. (Ukha is a classic clear Russian fish soup.)

  • My family loves to fish, especially in fall and winter, so ukha turns up on our table fairly often. Salmon ukha is my favorite — to my taste, salmon has the best flavor of any fish. It's also relatively easy to clean: the flesh comes away from the skin readily, and the bones are large. Naturally, you can use other kinds of fish too. Here's how I make salmon ukha. Cover the fish head and tail with water and cook for 25-30 minutes, then remove them and strain the broth. Bring the broth back to a boil. Cut the fish into small pieces, finely chop the onion and carrot, and cut the potatoes into cubes or sticks. Add the potatoes and fish to the boiling broth and cook for 15 minutes. Add the carrots and onion (you can sauté them in a little oil first if you like) and cook for another 5-7 minutes. Add the bay leaf and peppercorns. When serving, scatter finely chopped fresh herbs into each bowl. Enjoy!
