So, we begin the preparation of the glaze for cupcakes by whipping the egg whites well, then gradually add lemon juice and a small pinch of salt to the mass, continuing to whisk. After that, we cook the syrup from water and sugar. Now we continue to beat our mass and gradually, little by little, pour in the ready-made hot sugar syrup. After all the syrup is mixed in our mass, beat the whole mass for about 2-3 minutes. After that, carefully apply the resulting glaze to the finished cupcakes or cakes. Then we set aside the cupcakes for a couple of hours so that the glaze dries properly. Bon appetit!
