Step 1:

This dish is served with hollandaise sauce (optional).
It's not difficult to make hollandaise sauce. In a saucepan, mix 4 egg yolks and a tablespoon of lemon juice, put it in a water bath. Important: hot water should not touch the bottom of the bowl! Add 120 g of butter in three doses, each time waiting for it to dissolve and carefully mixing it into the lemon-egg mixture. When the sauce thickens, remove it from the heat, add salt and pepper.
To make the sauce even more tender and creamy, you can cook it a little differently. In a water bath, beat the yolks with lemon juice with a whisk or mixer until fluffy. Without ceasing to beat, pour in a thin stream of pre-melted and cooled to room temperature butter. Beat until thickened. Remove from heat, add salt, pepper and beat again.
Serve hollandaise sauce immediately!
