Pan-Fried Pork Bites with Onions

    How do you pan-fry pork with onions? Gather all your ingredients. You can use any cut of pork: neck, shoulder, leg, or belly. I'm using pork leg.

    Rinse the meat under running water and pat it dry with a paper towel to remove the excess moisture. Cut it into small, roughly equal pieces.

    Use a good flat-bottomed skillet. Heat it up well and add a little vegetable oil. Add the pork and sear it over high heat on all sides. Searing hard like this forms a crust all over and seals the juices inside the pieces.

    The meat will release liquid as it fries, but it'll evaporate right away. Lower the heat a bit and cook the pork for about 10 minutes, stirring now and then.

    While the meat fries, prep the onions. Peel them and rinse in cold water. Cut them into half-rings — don't chop them too fine, or they'll turn to mush as they fry.

    By now the pork is nicely seared and an appetizing golden color.

    Add the sliced onion to the pork and stir it all together.

    After a couple of minutes the onion will soften. Season the pork with a little salt and spices to taste. Keep frying everything together over low heat for another 10 to 15 minutes.

  • You can make this dish with any other meat in place of pork. Just keep in mind that the cooking time, flavor, and calorie count will change. Beef, for example, takes longer than pork, while chicken breast or turkey takes less.
  • Here's an easy way to tell whether the oil is hot enough: dip a wooden spatula into it. If bubbles gather around it, you're ready to start frying.
