Step-by-step cooking

Cooking time: 40 min
  1. Step 1:

    Step 1.

How to fry potatoes in sour cream in a frying pan? Very simple and fast, with a minimum of ingredients. First, prepare the necessary ingredients according to the list. Sour cream can take any fat content. Oil - any vegetable oil for frying. I have sunflower oil.

  2. Step 2:

    Step 2.

Wash, peel and cut the potatoes into cubes no more than 1 cm thick. Put the potatoes in a colander and rinse from excess starch, or alternatively, pour boiling water over them. Then dry thoroughly. In this way, you will remove excess starch, which prevents the potatoes from browning.

  3. Step 3:

    Step 3.

Pour water into the sour cream and mix until smooth. Such a trick will not allow sour cream to curdle much.

  4. Step 4:

    Step 4.

Heat vegetable oil in a non-stick frying pan over medium heat. Lay out the potatoes. I have a basic recipe that has only potatoes, sour cream and spices. However, in addition to these ingredients, you can add your own to taste at this stage. For example, an onion cut into half rings. Or mushrooms.

  5. Step 5:

    Step 5.

Fry for about 10 minutes, stirring occasionally, until a golden crust appears on most of the slices. Determine the degree of friability to your taste. I love when potatoes are all covered with a crust, someone likes, on the contrary, tender potatoes without a crust.

  6. Step 6:

    Step 6.

Reduce the heat to a minimum. Season the potatoes with salt, pepper, sprinkle with paprika and mix gently, trying not to crush the slices. In addition to these spices, you can add your own to taste. There are good ready-made mixtures for fried potatoes, but they usually already have salt and pepper, so you don't need to additionally salt and pepper potatoes with such mixtures.

  7. Step 7:

    Step 7.

Pour the sour cream mixture into the pan and mix gently. Simmer all together over low heat for about 10 minutes more. If the potatoes are boiling strongly at the time of adding sour cream, the sour cream may curdle, so it is better to reduce the fire in advance.

  8. Step 8:

    Step 8.

Wash the greens, dry them and chop them finely. Choose greens to taste. I have parsley and dill, but you can have cilantro, basil, green onion or green cherry.

  9. Step 9:

    Step 9.

Sprinkle the finished potatoes in sour cream with chopped herbs and remove from the heat.

  10. Step 10:

    Step 10.

Immediately arrange on plates and serve to the table. Bon appetit!
