Rustic Skillet Potato Wedges with Garlic

- Start by scrubbing the potatoes well and cutting out any eyes. There's no need to peel them — that's the nice part of this dish. The skin gets crisp, and it saves you time! Cut each potato into 8 wedges. For a prettier presentation, try to make the wedges an even size. Put the potatoes in a large bowl. Meanwhile, set a deep skillet over low heat and pour in about 1/2 tablespoon (10 grams) of the oil. Sprinkle the salt and paprika over the potatoes in the bowl, add the rest of the oil, and toss thoroughly — even with your hands, which is easier. You want the seasonings evenly coating every wedge so each one picks up the flavor. Add the potatoes to the hot oil in the heated skillet and keep the heat low. The wedges are larger than ordinary slices, so they need more time and can scorch even over medium heat. Important! Don't add fresh herbs at the start of cooking — they can burn and give the dish an off flavor. Fry the potatoes for about 20–25 minutes. Don't stir too often, or the wedges will lose their nice shape — 3 or 4 times is plenty. While they fry, dice the garlic small and finely chop the dill. (I always keep a bag of pre-chopped frozen dill in the freezer, which is super handy!) After 25 minutes of frying, add the garlic to the potatoes and let it cook gently for a couple more minutes. Plate them up, sprinkle with the finely chopped dill, and voilà — rustic potato wedges with garlic are ready! Enjoy!
