Fried Chicken and Vegetable Salad
A lifesaver for when you don't have time to cook. This chicken-and-vegetable salad is tasty and filling. It makes a full dinner on its own or rounds out potatoes, buckwheat, or pasta. You're going to love it!

Step 1:
How do you make a fried chicken and vegetable salad? Cut the chicken breast into thin strips or small cubes. Heat 1 tablespoon of vegetable oil in a skillet and add the chicken. Sprinkle with garlic powder if you like, salt it, and fry over high heat, stirring constantly, until cooked through — usually 3–5 minutes is enough.

Step 2:
Wash the lettuce well and dry it on paper towels. Put it in a deep bowl.

Wash and dry the cherry tomatoes and cucumber. Halve the cherry tomatoes, or leave them whole — your call. You can also use regular tomatoes cut into small pieces. Cut the cucumbers however you like. Add everything to the lettuce.

Step 4:
Peel the onion and slice it into thin half-moons. Red onion, white onion, or shallots are ideal for salads. Add it to the rest. Now make the dressing: in a separate bowl, whisk together the vegetable or olive oil and the whole-grain mustard.

Add the fried chicken to the salad and drizzle the dressing over the top. Squeeze on some fresh lemon juice to taste, then season with salt and pepper. Toss everything well and serve.
