Cooking method

  1. Step 1:

    Step 1

How do you make pan-fried pelmeni? Gather the ingredients for the dish. Start by making the dough for the pelmeni. Pour the sifted wheat flour into a deep bowl and make a small well in the center. Crack an egg into the flour, add salt, and pour in the vegetable oil.

  2. Step 2:

    Step 2

Knead the dough, starting by stirring it with a spoon.

  3. Step 3:

    Step 3

Once the dough comes together, turn it out onto a floured work surface. Knead a smooth, elastic dough by hand. Be prepared that you may need more or less flour than the recipe calls for — go by the desired consistency of the dough rather than the exact amount. Put the dough in a bag and refrigerate it for half an hour. Resting in a cool spot makes the dough easier to work with.

  4. Step 4:

    Step 4

While the dough rests, make the filling for the pelmeni. They'll be tastier and juicier with a filling of mixed ground beef and pork. For a lighter dish, you can use poultry (chicken or turkey) instead.

  5. Step 5:

    Step 5

You can buy ready-made ground meat from a trusted brand or grind fresh meat yourself. Add the finely chopped onion, salt, and ground black pepper to taste to the bowl of ground meat. Mix the ingredients thoroughly until evenly combined; to make the filling juicier, pour in a couple of tablespoons of water and mix again.

  6. Step 6:

    Step 6

Take the dough out of the refrigerator and divide it into several pieces. Roll each piece into a thin rope and cut it into small pieces. Roll each piece out into a small round. To speed things up, you can roll all the dough into a thin sheet and cut out rounds with a glass.

  7. Step 7:

    Step 7

Place a little filling in the center of each dough round with a teaspoon, seal the edges, and fold it over to form a neat dumpling.

  8. Step 8:

    Step 8

Put a pot of water on the stove and add a little salt. When it boils, drop in the pelmeni. Stir right away so they don't stick to the bottom. Cook the pelmeni for about 10 minutes, then lift them out with a slotted spoon.

  9. Step 9:

    Step 9

In a separate bowl, whisk an egg with a pinch of salt and a pinch of ground black pepper. Pour vegetable oil into a skillet and turn on the heat.

  10. Step 10:

    Step 10

Add the pelmeni to the oil and fry them on both sides until golden. Pour the egg mixture over the pelmeni and cook, covered, for about three minutes. Serve the dish with fresh herbs and vegetables. Enjoy!
