Beef Liver in Sour Cream with Onions and Carrots

You can turn it into all sorts of delicious dishes, but liver braised with vegetables in sour cream is a real standout. The carrots pair wonderfully with the liver, lending it a pleasant hint of sweetness, while the sour cream keeps it tender and moist.

Step 1:
Gather your ingredients. Choose the beef liver carefully at the store: a fresh, good-quality piece is red in color. Buy it chilled rather than frozen, since chilled liver holds more vitamins and nutrients. When you press it with a finger, the dent should spring back quickly. Rinse the liver, score the membrane and peel it away, and trim off any fat. Cut the liver into small pieces or cubes.

Peel the onion and cut it into cubes.

Wash and peel the carrot, then grate it on the medium holes of a box grater. A small, young, juicy carrot works best here.

Pour vegetable oil into a heavy-bottomed skillet or a sauté pan. Heat it up and add the chopped onion. Cook over medium heat until translucent. Add the grated carrot, stir, and cook everything together for about 7 more minutes, stirring occasionally with a spatula.

Now add the beef liver to the sautéed vegetables. Stir the liver together with the vegetables and cook over medium heat for about 10 minutes.

Next, stir in the sour cream. If it's thick and rich, thin it with a little water. Season with salt and ground black pepper to taste, and add any other seasonings you like. Stir, cover the pan, and simmer for about 30 minutes. If the liquid cooks off too fast, add a splash more water; if the sour cream sauce turns out too thin, simmer the liver uncovered for a bit to reduce it.

Turn off the heat and let the dish rest, covered, for a few minutes before serving. Beef liver goes well with just about any side: a grain, mashed potatoes, pasta, or braised vegetables. Enjoy!
