Chopped Chicken Patties with Mayonnaise
Very fast, very simple, very tasty—for dinner! Chopped chicken patties with mayonnaise will be a real discovery. You can make them in just 20–30 minutes and serve them with any vegetable salad or side, weeknight or holiday. They look bright and appetizing, too.

Step 1:
How do you make chopped chicken patties with mayonnaise? Gather everything on the list: chicken fillet (use chilled—it makes juicier patties), an egg, onion, mayonnaise (mine is 67% fat), salt, a high-smoke-point oil for frying, and breadcrumbs.

Step 2:
Rinse the fillet, trim off any excess fat and membranes, and pat it dry with paper towels. Chop the meat very finely with a knife.

Rinse, peel, and finely dice the onion. To keep the onion fumes from stinging your eyes, rinse the knife and the onion in cold water first.

Step 4:
In a deep bowl, combine the chopped chicken, onion, and mayonnaise, crack in the egg, and add salt. Mix thoroughly.

Add a spoonful of breadcrumbs to bind the mixture and knead it well.

Put the flour in a handy container for dredging (I used a sheet of plastic wrap). Shape the patties and roll them in the flour.

Heat a skillet and add the frying oil. To tell when the oil is hot enough, dip in a spatula: if bubbles gather around it, it's time to fry. Lay the flour-dredged patties in the pan (not too crowded). Fry on one side until browned, about 3–4 minutes. Times are approximate, since everyone's stove and pan are different.

Flip and fry the second side for about 2–3 minutes, then finish cooking through under a lid (you can add a splash of water, just a tablespoon).

- You can make these chopped patties not just from chicken breast fillet but from thigh fillet, drumstick, and so on. You can also use this recipe with turkey, pork, or beef—it turns out great too. Just keep in mind that different meats take different amounts of time to cook.
- Always wash eggs before using them, since even a shell that looks clean can carry harmful bacteria. A food-safe wash and a brush work best.
